Easy Chocolate Truffles

Easy, make-ahead bite-sized decadent delights that are great for over-the-top teacher gifts or holiday party.
- 8 ounces sweet chocolate melted with 1/4 cup amaretto liquor* and 2 tablespoons strong coffee
- 4 ounces softened butter
- 1 tablespoon vanilla extract
- 3/4 Cup crushed amaretti cookies,OR gingersnaps OR vanilla wafers
Melt the chocolate mixture until it is smooth. Whisk in butter a tablespoon at a time until melted. Add vanilla and stir. Beat in pulverized cookies. Set over ice and stir until chilled and fairly firm.
Forming: Roll about a teaspoon of the mixture into a round ball. Finish by rolling truffle in choice of outer coating:
- finely chopped nuts
- 1/2 C each powder sugar- coffee powder- cocoa mixture mixed together
- melted white chocolate
- finely chopped Oreo cookies
Put finished truffle in grilled paper cup. Refrigerate in an airtight container where they will keep for several weeks. Serve at room temperature.
*Can substitute bourbon or dark rum for liqueur.
** I usually use one LESS tablespoon of liquor.
