Hoho Sauce

A total rip-off a recipe from Julia Childs hot fudge sauce. Thanks Julia. For two+ decades, it has topped the chocolate roulade that Brent renamed the HoHo. Of course, also great over ice cream too. Crowd favorite.
For about 2 1/2 Cups
- 2/3 cup white corn syrup
- 2/3 cup of water
- 1/2 cup unsweetened cocoa powder
- 1 1/2 cups sugar
- 2 ounces of unsweetened, baking chocolate, chopped
- 6 tablespoons butter
- 1/2 cup heavy cream
- One pinch of salt
- 2 teaspoons pure vanilla extract
Boil the corn syrup in a small sauce pan for a minute or two until it forms heavy strands as you drop it off of spoon. Remove from heat and stir in the water. Sieve together the cocoa and sugar then whisk them in the corn syrup mixture. Simmer, stirring for several seconds until you're sure the sugar has completely dissolved. This is very important to since undissolved sugar will cause the sauce to crystallize. Add the baking chocolate and simmer, stirring until melted. Add the butter until it is melted. Stir in heavy cream. Bring to full boil for 15 seconds. Add salt and vanilla. Serve warm.
